Scientists Have Created ‘Hoppy’ Beer Without Hops

Hops are synonymous with beer, but scientists have found a way to create the hoppy taste without the drink’s signature ingredients. Their “hoppy” beer contains no hops and encourages more sustainable brewing. Researchers at UC Berkeley have developed a new strain of yeast that gives your craft beer a hoppy flavor of (or a bitter taste) without actually using the plant that hopes come from. Generally, it takes 50 pints of water to grow the hops used to brew one pint of craft beer. So this new method could help to cut down on water use, fertilizer used to grow the crop, and fuel used to transport and store it. To create the new yeast, researchers took genes from mint and basil that are also found in hops and engineered them into yeast using the gene-editing tool crispr. This gave the yeasts hop-like characteristics and flavor. Researchers say teste testers rated the gene-edited beer as hoppier than two other beers made with actual hops. The scientists launched startup Berkeley Brewing Science to market the yeast to breweries for more efficient and sustainable brewing. They also hope to experiment with gene-editing to create more natural and unique flavors for other beers.
